A former teacher has followed her dreams after opening a bakery and cake shop.

Devizes resident Nicky Hitt, who had previously taught at schools around the county, first set up her business TrayCake in 2019 after her son suffered a serious injury.

The business was originally a postal service providing sweet treats, but Mrs Hitt soon found herself behind a stall at the Devizes Market every Thursday.

Now she has taken another huge step and opened Sconnoisseur, a new traditional bakery, in The Ginnel.

The latest addition to the town’s food scene underwent a “test run” opening on Saturday, December 2, which saw baking begin ahead of a full opening on Saturday, December 9.

This move represents the realisation of a long-held dream for Mrs Hitt, who has successfully turned her “hobby” into a business and now a bakery.

“This was my way of moving from teaching full time into doing something a little different and just doing something for myself”, she said.

“It’s just a total release, it’s pleasurable because nobody ever complains about cake, and is something I always thought I might do but never got around to.

“Through my son’s recovery this was my way of getting over the incident, this was my therapy, so it’s great because I never thought it would turn into this.”

The new bakery will place a focus on providing different varieties of scones, with over 50 types on offer, but will also sell a range of cakes and macarons from a store with a “traditional bakery” feel.

Ahead of opening, Mrs Hitt told this paper she was excited to get customers through the door following a renovation of the premises.

She added: “The community has been brilliant and pushed me 100 per cent to do it.

“This place came up and it just felt right because The Ginnel is a great row of independent shops with brilliant traders that a lot of people aren’t aware of.

“I love it, I really do, I love the contact with my customers, and they love what we do so it’s nice to be part of someone’s celebration.”

Despite the opening of the bakery, the market stall will remain operational on Thursdays for the foreseeable future.

In the future, Mrs Hitt hopes to expand the business to provide gluten-free options for customers in a new bakery.
