When did you first take an interest in cooking, and when did you decide you wanted to become a chef?

I first took an interest in cooking in Malta. My family have always been food lovers in both respects of cooking and enjoying good homemade traditional foods, and enjoyed the fresh local produce that was available back home.

Where did you do your training?

I trained at the Arches in Malta in Mellieha which is a unique venue specialising in fine dining.

How would you describe the style of food served in your restaurant?

The food we serve is Maltese/Mediterranean Tapas

Do you have a signature dish? If so, what?

My favourite dish to prepare is slow-cooked belly pork glazed in Manuka honey and lightly seared to perfection.

What would you order from your own menu?

I would order the panfried asparagus wrapped in Serrano ham, which we also top with a poached egg as a vegetarian option.

What’s your favourite vegetable, and why?

Mushroom, there are so many varieties and flavours, and the creations with just one or a few other ingredients can be so satisfying.

And your favourite dessert?

My favourite dessert is a Panna Cotta. I have not met one yet that I disliked.

Do you cook a lot at home? What sort of food?

I have six children all grown up now, but I adore cooking for them when I can and we enjoy all different foods. A hearty vegetable filled homemade soup or meat filled pasta dish are always a hit.

Where else locally do you like to eat?

I enjoy the Moshan Island Grill for Caribbean food.
