This week it’s the turn of Edson Santos, chef at Frankie & Benny’s, Greenbridge. Call 01793 613136

When did you first take an interest in cooking, and when did you decide you wanted to become a chef?

I have been interested in cooking since I was a child but tried some other jobs first when I left school. I became a chef eight years ago.

Where did you do your training?

With Frankie & Bennys. They trained me fully and I have developed and progressed within the company.

How would you describe the style of food served in your restaurant?

New York Italian-style food.

Do you have a signature dish? If so, what?

There are several signature dishes on the menu, including meatballs on spaghetti, the Boston 7 pizza, and the New York Chicken.

What would you order from your own menu?

I especially think our pizzas are fantastic, but when I’m feeling hungry (and naughty) I love to tuck into our Philly cheese burger.

Your favourite vegetable, and why?

Broccoli. I enjoy the taste and its very good for you.

And favourite dessert?

Tiramisu is a favourite of mine, but at the moment I am really into our cinnamon waffle toffee crunch.

Do you cook a lot at home? What sort of food?

I don’t cook much at home, but when I do, I like to make roast chicken with lots of fresh vegetables.

Where else locally do you like to eat?

Anywhere, I always like to try new restaurants and new flavours.

Why should people come to Frankie and Benny’s?

There are so many dishes from our menu for people to enjoy and they can experience the real American diner-style of restaurant.
