Staff at Hayden’s Bakery in Devizes have been producing a new trifle for Waitrose to celebrate the royal wedding.

The Waitrose Royal Trifle has been created by top chef Heston Blumenthal and employees at Hayden’s, on Hopton Industrial Estate, have been making 2,000 a day since last week to fulfill an order of 13,000.

The trifle is totally hand made on the production line with no automation.

Twenty staff start work at 4am to cut the strawberries by hand while another 16 staff put the rest of the ingredients together, making four trifles per minute.

Mandy Bingham, acting factory manager, said: “This is a first for us, making 2,000 products a day totally hand made.

“The team we have working on the Waitrose Royal Trifle have all got their speciality and the product looks fantastic.

“The whole team are excited about working on it.”

Steve Watters, a team leader has been starting an hour earlier than usual to start mixing the various creams.

Heston’s twist on the trifle means that instead of custard, jelly and sherry there is cream infused with saffron, strawberry compote and Marc de Champagne.

Hayden’s, on Hopton Industrial Estate, is the only bakery producing the trifle for Waitrose, which is on sale for £13.99.

Hayden’s has 45 per cent of Waitrose’s dessert business and Hayden’s managing director Paul Smith said: “Hayden’s has enjoyed a special relationship with Waitrose over a number of years and we are delighted to be able to support them in producing an absolutely fantastic dessert to celebrate the royal wedding.

“We are delighted to be able to produce something of such high quality for this very special occasion.”

The final day of production of the trifles is tomorrow but staff will have a chance to catch up with the royal wedding on their breaks by watching TVs in the staff cafes.
