Chef Dan Miles is gearing up for the most important meal of his career, as he prepares to cook for a host of world- famous chefs.

The Colerne 26-year-old, who works at Lucknam Park, will be in London today for the regional final of the the Roux Scholarship and the chance to train at a Michelin-starred restaurant.

The award is judged by chefs Michel and Albert Roux, with sons Alain and Michel Jr.

Mr Miles said: “I would be surprised to win, but as it’s my first competition I am just going to go and enjoy as much as I can. Cooking for the Roux brothers would be amazing.”

He is one of 18 chefs competing and was selected after submitting a recipe for venison with Jerusalem artichokes, which he will cook.

He said: “Then there’s a dessert mystery basket, and I have no idea what will be in it. We’ve done a couple of practice rounds at work and all the lads have had some fun coming up with things for me to cook with.”

The winner will get £5,000 to support their career and an invitation to cook at a three-star Michelin restaurant, anywhere in the world, for three months.
