This week it’s the turn of VICTORIA PACKFORD, 33, chef at Twelve Oaks golf club restaurant in Highworth. Call 01793 763749

When did you first take an interest in cooking and when did you decide you wanted to become a chef?

I have loved cooking and baking since an early age – it is a passion of mine!

Where did you do your training?

I have a number of NVQ qualifications but most of my learning has been self-taught. My best tutor, by far, is my lovely mum – she is a fabulous cook!

How would you describe the style of food served in your restaurant?

Homemade traditional meals.

Do you have a signature dish? If so, what?

It would have to be my Sunday roast – I enjoy making it each Sunday.

What would you order from your own menu?

Homemade nut roast, because you can’t get it anywhere these days.

Your favourite vegetable, and why?

Butternut squash, because it tastes so good roasted.

Favourite dessert?

As I am a chocoholic – anything with chocolate in especially dark chocolate!

Do you cook at home? What sort of food?

Yes I enjoy cooking and baking at home. Risotto is my favourite meal to make. Chelsea Buns are also a favourite creation.

Where locally do you like to eat?

I enjoy eating at Italian restaurants; Pinos in Lechlade is very good.

Why should people come to Twelve Oaks Restaurant?

All our team at Twelve Oaks offer a warm and friendly welcome in a relaxed atmosphere, where all my meals and cakes are home made.
